Saying "the USA is not a democracy; it's a republic!" is much like saying
"a monkey isn't a brown animal; it's a mammal!" (hint: a monkey is both.)

Not all republics are democracies. Check the dictionary.

Never said they were. Just like I never said that all brown animals are
mammals.

There are certainly brown animals that are not mammals -- e.g. the kiwi,
and several species of snake. There are also mammals that are not brown --
e.g. the zebra and the dolphin.

However, a monkey is both brown and a mammal.

There are certainly republics that are not democracies. There have been
democracies that were not republics (ancient Greece springs to mind) but
those are quite impractical.

However, the USA is both a democracy and a republic.

Why? I am already well aware of their respective definitions.

The same way as the capybara is a fish (according to the Catholic church)
or the same way that a horse may be legally argued to be a bird (Regina
vs. Ojibway)?

I think that this is possibly the most helpful comment on the topic so far.
