I used to love Jalapeno peppers, but as I get older, I'm finding them a bit difficult to cope with. Even so - I haven't enough sense to completely avoid them, I'm afraid.

Southwestern Cactus Salad

Submitted by: Lupe Burke

"A delicious spicy salad, made from tender cactus, tomatoes, onions, jalapenos, cilantro, and lemons. This is hot and spicy, so beware!" Original recipe yield: 8 servings.
Prep Time:1 Hour 5 MinutesReady In:1 Hour 5 MinutesServings:8 (change)

INGREDIENTS:
  • 1 (16 ounce) jar nopales - drained, rinsed, and dried
  • 2 cups chopped tomatoes
  • 1/2 cup diced onion
  • 5 jalapeno peppers, seeded and minced
  • 1/2 cup fresh cilantro leaves
  • 2 lemons
  • 1/2 teaspoon garlic salt (optional)

DIRECTIONS:
  1. In a medium size mixing bowl, combine cactus, tomatoes, onions, jalapenos and cilantro. Squeeze the juice from both lemons over the mixture. Cover and refrigerate for at least 1 hour. Sprinkle with garlic salt (if you'd like) and serve.

(Just a note, nopales is the cactus).

It looks interesting, that's for sure! I'll have to copy this one, Paul - and see if Bob's game to try it!

I wonder...

This wasn't hot though. I'm going to get Sofia's recipe.

It's after 2300 hours here, I had a long day and I'm tired. I'll stop in before work tomorrow.
