Smoked some ribs today. Wife and kids made homemade pizza for dinner. We had pizza, and put the ribs covered in the fridge for tomorrow.

Heat in oven, make garlic mashed taters w/ gravy, some green beans, and it's a 20 minute meal.

About 6:30. My mashed taters are on the 'lumpy' side though. Let's you know they are 'real'.. No boxed stuff for me thanks. My family is to good for that.

Lumpy's are the BEST. I will also serve 'Country Gravy'.. Let's just say I've violated my Dutch Canadian wifes pallet with 'southern' cooking. Never had a complaint tho.

I also love the AUTHENTIC Mexican, no 'tacobell texmex' crap. Just the good stuff. She's not 'down' with the hot stuff, so I tone it down for her, and add my jalapenos to mine.

I love good Mexican food. I took my granddaughter to a neighbor kid's birthday party. It was a Mexican family and they put on a feast. I've got to find out what a couple of things were so I can make them. One was a thin steak marinated in something and grilled. Another was a cactus salad. That was delicious. It had cactus sliced about the same size as green beans, cilantro, sliced tomatoes, diced onions and I think oil and vinegar. Good eating.

Yup, can't beat good eats. God did not put lower life forms, and plants on His earth if he did want us to eat them. Besides, in the 'long' run, it goes back into the earth anyway. ROFL!!!

So, how 'bout that drink?

Cactus salad.

15 oz Jar Nopalitos, drained,
Rinsed, and diced
4 Green Onions, ends trimmed,
Minced
¾ lb Roma Tomatoes, cored and
Finely chopped
¼ c Lime Juice
2 tb Fresh Cilantro, minced
Salt

1 1/2 lb Beef flank steak
1/3 c Fresh lemon juice
1/3 c Extra virgin olive oil
6 tb Minced jalapeno peppers
1 tb Minced fresh cilantro
1 t Salt
1 t Fresh ground black pepper
