Default Finish date minus total slack calculation

I need to take an actual finish date and subtract the total slack to determine a nominal date. I'm not sure where to even start.

That makes very little sense to me.
What do you mean by a nominal date?
Why would you subtract total slack?
I can't think of any meaningful result that you would get by using this
calculation.

But nevertheless, you could use a user defined field (one of the text
fields) and a formula

ProjDateSub([Finish],[Total Slack])

to get the result.
To set up this formula, go to insert menu
choose column
pick one of the text columns you aren't using
right click on the column header
choose customize
click on the formula button
enter the formula exactly as above (do not use an = sign like you would in
excel)
click ok
