What does sugar do in gas tank

They got someone on "The Peoples Court" that put sugar in someones gas
tank. I have heard of this before, causing problems with the car.
My questions is what does the sugar do to the gas and the car?

Sweetens it, I suppose.

Once in the high pressure and temperature of the cylinder, it forms
into carbon goo, generally destroying the engine by causing the crank,
piston shaft, or block, to break.
